Yucca Fries + Bean Cilantro Dip

 Ingredients

Yucca Fries

  • 1 yucca, peeled and sliced into fries

  • 3 tbsp olive oil

  • Salt and pepper to taste

Bean Cilantro Dip

  • 1 can black beans, drained and rinsed

  • A handful of cilantro

  • ¼ cup olive oil

  • Juice of 1 lime

  • 1 tbsp garlic

  • 2 tbsp minced onions

  • 2 tbsp Champagne vinegar

  • Salt and pepper to taste

Instructions

Make the Bean Cilantro Dip

  1. In a blender or food processor, combine black beans, cilantro, olive oil, lime juice, garlic, minced onions, and Champagne vinegar.

  2. Blend until smooth, adding a splash of water if needed to reach a creamy consistency.

  3. Season with salt and pepper to taste. Transfer to a bowl and set aside.

Cook the Yucca Fries

  1. Bring a pot of salted water to a boil. Add the yucca slices and boil for about 10 minutes, or until slightly tender. Drain and pat dry.

  2. Preheat the oven to 425°F (220°C). Toss the boiled yucca fries with olive oil, salt, and pepper.

  3. Spread evenly on a baking sheet and bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
