Ingredients

  • 1 can of black beans

  • 1 cup of red onions 

  • 2 cloves of garlic, minced 

  • ½ cup of cilantro 

  • 2 tbsp of minced jalapeno  

  • ¼ cup of olive oil

  • 1 vegetable cube

  • 2 tablespoons cotija cheese for garnish, optional

Instructions

  1. Pour the olive oil into a medium size pot. Once the oil has heated up, add garlic, onion, jalapeno and a vegetable cube to the pot. 

  2. Once everything has cooked down add the black beans and the cilantro. Allow everything to cook for ~5 minutes. 

  3. Transfer everything into a blender or food processor. Blend until smooth.

  4. Pour the black bean  dip in a bowl and garnish with cotija cheese, if using. Serve with tortilla chips and/ cut up vegetables. 

    Note: Omit the cheese garnish for a vegan dip.
