Ingredients
1 can of black beans
1 cup of red onions
2 cloves of garlic, minced
½ cup of cilantro
2 tbsp of minced jalapeno
¼ cup of olive oil
1 vegetable cube
2 tablespoons cotija cheese for garnish, optional
Instructions
Pour the olive oil into a medium size pot. Once the oil has heated up, add garlic, onion, jalapeno and a vegetable cube to the pot.
Once everything has cooked down add the black beans and the cilantro. Allow everything to cook for ~5 minutes.
Transfer everything into a blender or food processor. Blend until smooth.
Pour the black bean dip in a bowl and garnish with cotija cheese, if using. Serve with tortilla chips and/ cut up vegetables.
Note: Omit the cheese garnish for a vegan dip.
